Kebbe

Saturday 18 December

11 am – 1.30 pm @ New Oriel Hall, Bath, BA1 6RA

Kebbe is a dish reserved for special occasions and guests so it is perfect for a Christmas celebration.  Kebbe is the most celebrated Lebanese meat dish made with beef, crushed wheat, basil, spices and nuts.  We will also be making the vegetarian version based on potato – Kebbet batata.

For starters, we will be transforming the humble aubergine into a delicious Lebanese dip – Baba Ganoush.

2.5 hour class including eating

Baklava

Wednesday 15 December

6pm – 9pm via Zoom

Learn how to make your very own Baklava and you will never want anything else!  Homemade baklava is not overly sweet and full of flavour and nuts.

2-hour class plus one hour or more sharing our food together online.

Adas b Hamod:  aromatic spinach soup with lentils and coriander – a winter immunity booster in a bowl

Batata wo Kozbra: potatoes with fried garlic and coriander to tickle your tastebuds

Dfeen: bulgur wheat (or rice for gluten free), chick peas with pulled chicken (or without for vegetarian and vegan) topped with roasted almonds and served with a yogurt salad

Valentine Baklava

Shourbet adas: lentil soup to warm your heart and make you feel good

Fattet Makdous: a most loved dish that will transport you to the Middle East.  Made with layers of minced beef cooked in tomato sauce with pomegranate molasses on a bed of crispy bread topped with aubergine slices topped with tahini sauce topped with nuts.  Alternative ingredients used for vegetarians and vegans.

Sabi Tamer: crunchy and crumbly pastry-wrapped around dates topped with sesame seeds

I recently organised an evening cookalong with Wafaa team event for my remote working team from work. It was a fantastic way of bringing everyone together in a non-work environment. From the outset of planning, Wafaa was extremely engaging ensuring that the menu suited everyone even going as far as creating a vegetarian menu which was cooked in parallel. Wafaa regaled the team with stories of Lebanon and Lebanese culture and the importance of food throughout the cooking and meal, at the appropriate point Wafaa left and allowed the team to enjoy a non-work chat and opportunity to let our hair down a bit. I can not recommend this format enough, great fun, perfect host, wonderful evening had by all.
