Lebanese cuisine is influenced by the Mediterranean and is considered as one of the healthiest and most versatile in the world. Using fresh ingredients, each dish is aromatic and is rich in delicate flavours – tasty and healthy but not hot and spicy.
The base ingredients for a typical Lebanese cuisine dish include olive oil, garlic, onions, lemons, vegetables, grains and pulses. Meats are typically chicken, lamb, beef, goat as well as fish. Parsley and mint, coriander and basil are used a lot. Sumac, cardamom, nutmeg and cinnamon are amongst the many spices used regularly. Sumac, perhaps not so well known as the others, is a tangy, lemony spice; try using it in salads instead of lemon juice or to season grilled meat and fish. It’s also delicious sprinkled over hummus.
